Ingredients
Pretzel crusted chicken
¼cupgreek yogurt(or sour cream)
¼cupmayonnaise
¼cupdijon mustard
2poundschicken breasts, cut into 1-2 inch bite size pieces
1 ½cupscrushed pretzels
¼cupall-purpose flour
1teaspoongarlic powder
1teaspoononion powder
½teaspoonpaprika powder
¼teaspoonsalt
¼teaspoonpepper
Olive oil cooking spray
Chipotle honey mustard
¼cupdijon mustard
1tablespoonyellow mustard
2tablespoonshoney
¼cupgreek yogurt(or sour cream)
¼cupmayonnaise
1teaspoonapple cider vinegar
1-2teaspoonschipotle chili powder(to taste)
¼teaspoonpaprika powder
Instructions
Pretzel crusted chicken
In a large bowl, whisk together the greek yogurt, mayonnaise and dijon mustard. Add the chicken and toss to coat. Cover and refrigerate for at least 2 hours or overnight.
In a medium bowl, mix together the crushed pretzels, flour, garlic powder, onion powder, paprika, salt and pepper.
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Working with a few pieces of chicken at a time, remove the chicken from the marinade and roll into the pretzel and flour mixture, pressing to adhere. Place on the prepared baking sheet.
Generously spray the pretzel crusted chicken with olive oil. Bake for 20-25 minutes, or until the chicken is cooked through.
Chipotle honey mustard
While the chicken bakes, whisk together all chipotle honey mustard ingredients in a small bowl.
Serve the chicken with the chipotle honey mustard dipping sauce.
