Easy recipe for baked potatoes in the Instant Pot! Perfectly soft and fluffy baked potatoes every time. Recipe includes instructions for potatoes of all size. Just add the potatoes and water to the instant pot and let it do all the work!
Place the trivet in the instant pot and pour in one cup of cold water.
Pierece the potatoes all over with a fork, about 4-6 times for each potato. Place the potatoes in the Instant Pot on top of the trivet.
Secure the Instant Pot lid and turn the knob to "seal".
Set the Instant Pot to high pressure and cook according to the size of the potaotes. Use potatoes that are all relatively the same size.Medium potatoes: 15 minutesLarge (average) potatoes: 22 minutesExtra large potatoes: 30 minutes
Once the potatoes have finished cooking, let the pressure naturally release for at least 10 minutes before doing a quick release of pressure.
Remove the potatoes and serve with your favorite baked potato toppings!
Notes
Crispy potato skin: If you want to crips the potato skins, rub the cooked potatoes with olive oil and season with salt and pepper. Place under the broiler for about 2-3 minutes per side until crispy.
