Cinnamon Sugar Churro Popovers are super easy to make and popping with flavor! All you need is 10 minutes to mix up the batter, then bake in a muffin tin until golden, puffed perfection. Brush the warm popovers with butter, sprinkle with cinnamon sugar and serve warm with homemade vanilla icing. So amazing!!
1 ½cupsall-purpose flour(spoon into measuring cup and level)
½teaspoonsalt
3tablespoonsbuttermelted, plus more for brushing on the warm popovers
½cupgranulated sugar
1 ½tablespoonscinnamon
Vanilla icing
1cuppowdered sugar
2-3tablespoonsmilk(substitute half & half or heavy cream)
½teaspoonvanilla
pinch ofsalt
Instructions
To quickly bring the eggs to room temperature, place the uncracked eggs into a bowl of hot water. Let sit for about 10 minutes. To warm the milk, microwave for about 1 minute, stirring halfway through.
Position one oven rack on the second lowest shelf. Make sure the other oven racks aren't directly above so the popovers have room to expand. Preheat the oven to 450 degrees F. Spray a 12-cup muffin tin with olive oil spray or grease with a little butter.
In a medium-size bowl, whisk together the milk and eggs until well combined and frothy, about 1-2 minutes. Whisk the flour and salt into the egg and milk mixture until just combined, about 30 seconds. Lastly, whisk in the 3 tablespoons of melted butter.
Place the greased muffin tin in the hot oven for abot 2-3 minutes before filling the cups. Remove the hot muffin tin from the oven and evenly divide the batter among the muffin cups until they're about ¾ full. Bake for 20 minutes, or until the popovers are puffed and a deep golden brown. Do not open the oven while the popovers bake! If using a popover tin, reduce the heat to 350 after 20 minutes and bake an additional 15-20 minutes.
While the popovers bake, make the cinnamon sugar and the vanilla icing.Cinnamon sugar: In a small bowl, mix together the sugar and cinnamon.Vanilla icing: In a small bowl, mix together the powdered sugar, milk, vanilla and salt. If the icing is too thick, add a little more milk. If it's too thin, add more powdered sugar.
Melt about 1-2 tablespoons of butter then brush the warm popovers with the butter. Roll the buttered popovers thorugh the cinnamon sugar.
Serve with vanilla icing! Pleaes note, popovers are best served warm and fresh!
